Recipe 2: Blueberry Hill Cupcakes

 

Ingredients: Cupcakes

- 3 1/4 cups flour (mel)

- 1 1/4 cups sugar

- 1 tablespoon baking powder

- 1/2 teaspoon salt

- 1/4 teaspoon baking soda (natron)

- 6 tablespoons (3/4 stick) butter, melted

- 1/4 cup canola oil

- 2 large eggs

- 1 cup buttermilk or low-fat yoghurt

- 1 cup milk

- 1 teaspoon vanilla extract

- 1 teaspoon granted lemon peel (sitronskall)

- 1 1/4 fresh/ frozen blueberries

Ingredients: Frosting

- 2 1/4 cups powdered sugar (melis)

- 10 tablespoons (1 1/4 sticks) butter, room temperature

- 1/2 cup + 2 tablespoons maple sirup (lønnesirup)

- 1/2 teaspoon salt

- 1 1/4 teaspoons vanilla extract

- 4 teaspoons (or more) milk, se på konsistensen

- (1 cup chilled berries as decoration - optional)

 

What to do:

1. Preheat oven to 350 degrees Fahrenheit = 175 grader Celsius.

2. Sift flour and next 4 ingredients into large bowl.

3. Whisk melted butter and oil in medium bowl.

4. Add eggs; whisk to blend.

5. Whisk in buttermilk, milk, vanilla extract, and lemon peel.

6. Add buttermilk mixture to dry ingredients; whisk just to blend.

7. Stir in frozen blueberries



 8. Fordel cupcake-røren i cupcakes-former som er plassert utover et brett. Makes about 30 cupcakes.



Bake for approxemently 23 min, until tester inserted into center comes out clean (stikk en strikkepinne e.l. for å se om cupcake'ene er ferdige, henger det røre igjen på pinnen må de stå litt lenger).

9. Transfer cupcakes to racks (rist); cool.

Frosting: 

10. Combine the first 5 ingredients (powdered sugar, butter, maple sirup, salt and vanilla extract) into a lagre mixing bowl.

11. Add 4 teaspoons of milk.

12. Mix until fluffy.

13. If dry, add inn more milk by teaspoons.

14. Spread frosting over top of cupcakes.

15. Garnish berries with berries, if desired.

Recipe 1: Mrs. Fields Chocolate Chip Cookies

Ingredients:

- 1 cup (2 sticks) softened butter (mål opp smør, og la det stå på benken litt slik at det er mykt)

- 1/2 cup white sugar

- 1 1/2 cups brown sugar

- 2 eggs

- 2 1/2 teaspoons vanilla extract

- 2 1/2 cups flour (mel)

- 3/4 teaspoon salt (kan sløyfes)

- 1 teaspoon baking soda (natron)

- 1 teaspoon baking powder (bakepulver)

- 3 cups semi-sweet chocolate chips

What to do:

1. Preheat oven to 350 degrees Fahrenheit = 175 grader Celsius.

2. In a large mixing bowl: cream together the butter and sugars, then the eggs and vanilla.

3. Combine all the dry ingredients with the wet.

4. Stir in the chocolate chips.

5. Use fingers/ spoons and place small lime-sized dough portions on an ungreased cookie sheet about 2 inches apart.



Bake for 9-10 min. or just until edges are light brown. (På andre/ tredje rille i ovnen).

Makes about 40 cookies. 



PS: do not cook to long. They don't seem to be done after 10 min, but they will continue to cook for awhile after you take them out of the oven, and when cool, they will be nice and chewy. Mmm.. got milk?
